    2 1/2  Cups          fresh watermelon juice
    2                    tomatoes -- chopped
    1      Small         cucumber -- peeled and diced
    3                    scallions
                         Salt and pepper
                         Crostini for garnish
 
 In a blender combine watermelon juice, tomatoes, cucumber, scallions. and
 salt and pepper.
 
 Serve in bowls garnished with crostini.
