African Vegetarian Stew RecipeAfrican Vegetarian Stew Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Diabetic Vegetables Vegetarian Crockpot Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 small Kohlrabies -- peeled and cut with liquid -- (chick-peas) Into chunks 1/2 cup Couscous -or- Bulgar Wheat 1 large Onion -- chopped 1/4 cup Raisins -- dark or golden 2 Sweet Potatoes -- peeled and 1 teaspoon Ground Coriander Cut into chunks 1/2 teaspoon Ground Turmeric 2 Zucchini -- sliced thick 1/2 teaspoon Ground Cinnamon 5 Tomatoes -- fresh -or- 1/2 teaspoon Ground Ginger 1 Can Tomatoes -- (16 ounces) 1/4 teaspoon Ground Cumin 1 Can Garbanzo beans -- (15 ounces) 3 cups Water Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes. Note: Serve the couscous separately, if desired. Parsnips may be substituted for the kohlrabi.
