Minestrone Soup2 (diabetic) RecipeMinestrone Soup #2 (diabetic) Recipe By : Taken from Family Cookbook Vol.III - ADA Serving Size : 10 Preparation Time :0:00 Categories : Crockpot Diabetic Healthy And Hearty Italian Soups & Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Ingredients: 1 cup onion -- chopped 3 cloves garlic -- chopped 1 tablespoon olive oil 8 cups beef broth 1 cup zucchini -- sliced 3/4 cup carrots -- sliced 2 ribs celery -- sliced 3 1/2 cups tomatoes -- canned, Italian Plum -- crushed 4 cups cannellini beans -- drained or any white bean 1 cup cabbage -- shredded 1 cup potato -- peeled & cubes 1 teaspoon basil -- dry crushed 1/2 teaspoon black pepper 2 tablespoons tomato paste 1 Package green beans -- Italian cut (10 oz) 1/2 cup macaroni (elbow) 1/2 cup Parmesan cheese -- grated Method: In large stockpot, sauté onion and garlic in olive oil until soft but not brown (about 10 minutes). Add remaining ingredients except Italian green beans, pasta, and Parmesan cheese. Bring to boil; cover; reduce heat and simmer for 1 hour. Stir in beans, pasta and half the Parmesan cheese. Simmer for an additional 15 minutes. Taste for seasoning. Serve hot or at room temperature. Serve in bowls with remaining Parmesan cheese.
