Bittersweet/white Chocolate Bar Cookies/pt Recipe


Title: Bittersweet/white Chocolate Bar Cookies/pt 1

   2 1/4 c  All-purpose flour
            Or unbleached white flour)
     1/4 c  Unsweetened cocoa powder
     3/4 ts Baking powder
     1/8 ts Salt
       1 lg Egg
   3 1/2 oz Almond paste
            Cut into small pieces)
     1/2 ts Almond extract
       1 c  Unsalted butter; softened
     1/3 c  Granulated sugar
       2 oz Bittersweet chocolate
            Or semisweet chocolate
            - finely grate
            Bittersweet chocolate glaze:
       1 tb Solid vegetable shortening
       6 oz Bittersweet or semisweet
            Chocolate/coarsely chopped
       1 oz Unsweetened chocolate
            Coarsely chopped
            White chocolate glaze:
     1/2 ts Vegetable shortening
       1 oz White chocolate
            Coarsely chopped
  
      The inspiration for this recipe was a little package of chocolate
   cookies I bought from a pastry shop in Geneva many years ago. The
   bar-shaped cookies had a rich almond and chocolate flavor and were cloaked
   in a bittersweet chocolate glaze. To complete the dramatic professional
   look, they were drizzled with white chocolate stripes.  My version of these
   cookies looks and tastes quite similar to the ones I remember.
