All-America Apple Bread Recipe


Title: All-America Apple Bread
  Categories: Breads
       Yield: 20 Servings
  
       2 tb Unsalted butter
      10 oz Jonathan or McIntosh apples
       1 ts Coriander seeds
       1 lg Egg
       2 tb Honey
       2 tb Skim milk
   1 3/4 c  All-purpose flour
            -unbleached enriched
     1/2 ts Baking powder
     1/2 ts Baking soda
     1/4 ts Kosher salt
       1 ts Vanilla extract
  
   Preheat the oven to 350. Melt the butter in a small pan and set aside.
   
   Peel and core the apples and shred in a food processor or on the coarse
   side of a vegetable grater. Grind the coriander seeds with a mortar and
   pestle or a spice grinder. Set aside.
   
   Beat the egg in a mixing bowl. Add the honey, milk, and butter and mix
   well. Add the shredded apples and mix. Combine the dry ingredients and add
   to the apple mixture. Mix well. Add the vanilla and mix. Pour the batter
   into a nonstick 8 1/2" x 4 1/2" x 2 1/2" loaf pan. Bake until lightly
   browned and firm to the touch (45-50 minutes). Transfer from the oven to a
   cooling rack for 5 minutes. Turn out onto the rack and cool for several
   hours before slicing.
